i just leave them the way they are without stuffing them, and i toast them a little in the broiler and then i put on some rice(you can use plain or rice-a-roni or those funky little uncle ben's packs) and then some alfalfa sprouts. then i fold it and eat it kinda like a taco. its pretty damn good.
black beans and rice sounds really good! i have some in the kitchen now, i'd say i usually put lettuce and veggie bacon in it, im not a tomato person
coleslaw, hummus and felafel. or use it as a pizza base when u need pizza real quick (as is often the case for me)
man rice and beans go better with tortillas(as long as their not cajun style), pita bread is like tortillas but it's different. homemade tortillas are best, flour or corn work both are good.
what i do is make a salad with whatever i want, usually lettice,carrots,nuts,veggies etc., lay the pita flat and dump the salad into it and roll it up and eat it like like a big eggrole, pita bread holds the french dressing in and doesnt leak all over too
