what is protease?

    i see it in a number of crackers at the health food store. i've seen it in nothing else, but many brands of crackers. what is this mystery ingredient?

    nobody here knows either? perhaps i'll do the old fashioned thing and look it up...

    proteases are degestive enzymes that break up (lyse) and help digest proteins.

    Omin vore is correct.....the question is what the fuck is that doing in crackers?

    lots of people put meat on crackers(not me im vegan) but this is my explanation for it. Since the enzyme helps digest the proteins in meat. Of course this is probably an extremely stupid explanation and is probably veyr incorrect, but its a hypothesis.

    i don't know! hmm...so protease is vegan and not shady? or it is shady perhaps. perhaps i'll stay away from these crackers. maybe protease exists in other veg/meat foods but since i don't eat them, i wouldn't notice...

    Protease is just an enzyme, this can be made either artificially, theorethically also from the intestines of dead animals. But the latter one is probably a lot more expensive... so, I bet it is artificially. Ask at the healthfoodstore. they usually know these things. HEre, it is more an exception that healthfood contains things that are artificial, but they don't contain things like flavour enhancers and things that are not really nececarry for the cracker either. And an enzyme would surely not be of this type. But I don't know. Maybe ask. They will help you. If they don't know, they'll ask the manufacturer.
