spun off from Twyla Red's thread. in Colorado, I am definitely getting ahead of myself, as a blizzard is lurking somewhere, but damn...75 degrees F yesterday and all the neighbor fired up grills. I have a theory that we are designed to salivate and enjoy fire because for centuries fire=food. So what do we put on those smoking coals? my no longer uber secret veggie kabobs (modified from dead lot) tofu or seitan in cubes red peppers (green if you like them. I don't) sweet potatoes roundels of cob corn tomatoes, mushrooms (yummm portobellos) what's not-watery and on sale? marinades: East asian shoyu or tamari rice wine vinegar aguave nectar (or other seewtner) fruit juice of choice (what's on sale) ginger five spice costal Mex: lime juice aguave nectar chiles (lots of chiles) toasted cumin oregano (Mexican if you can get it) Ranchero mex/ texas tequila or cerveza pepper jalapenos Mumbai magic mango/papya juice garam masala tosted cumin (small amount, less than Ranchero taste) marinate the seitan/tofu for at least four hours veggies can absorb enough in basting, but some do well in the marinade, too. Experiment. use bamboo skewers, or rosemary branches. soak them in water and thread alternating veggies and seutan/tofu. grill over medium coals use marinades as basting. Ranchero can be made typical KC/ Texas wet with addition of a good sauce. I picked up Stubb's in Austin and loved it. done when you see enough black marks for your taste. I often pre-cook the tofu and seitan because i like them drier. I will place them on a mesh over the grill rack ANd what do YOU do on fire?
umm, yeah, veggie kebabs are soo good. Your recipies sound great - come summer..still so many month away...i'll so try them our kebabs usually have a mix of things like eggplant, zuchinni, cherry tomatoes, red onion, yellow capsicum, tofu (i like to freeze it,then thaw it, for a better bbq texture)... marinate them in a mix of sweet chilli sauce, a little brown sugar, lime cordial, lime juice, a dash of olive oil and white wine. It's so good.
Those sound so good, will have to try. My fave thing is to grill corn on the cob. Then serve with loads of butter, or paprika & lime juice. And of course there's always decent veggie burgers and such.
I often have to fight to get my veggie food at a company get together. I'm at a new paper with another veggie, so I'm planning on tripling the amounts this year.
