stems of leafy green veggies

    sometimes i remove the bottom area of my kale before steaming it. i don't remove all of it, but a good enough portion, because i find it to be rindy and not all that tasty. i eat some of the stem, plus all the leaves.
    so i was wondering...where would i find most of the nutritional goodness, in the stem or the leaves? my vote would be the leaves.
    but i don't know...insights?

    In the leaves. The leaf is what does all the work. (Photosynthesis) So the plant is going to send most of it's resources there. The stem is mostly just for structural support. It holds the leaf up and erect so it can do it's job properly.
