Dead Can Dance/Lisa Gerrard - Unconventional, well researched, evocations of ancient Rome, Medieval and Renaissance Europe, and something undefined and undefinable.

Vas/Azam Ali - a lot like Dead Can Dance but with a little more Persian/Middle Eastern flavor.

and then there are the Indians:

    Ravi Shankar
    L. Subramanium
    Bismillah Khan
    Ali Akbar Khan
    Hari Prasad Chaurasia
    Vishwa Mohan Bhatt

This is a good place to start.
