I have canned quarts of peppers and tomatoes over the years for sauces etc. This year i had quite a harvest of peppers. I pickled a few pints of pepper slices acording to "Heinz" recipe book i have using equal parts white vinager and water with 1 half part sugar.Heated that mixture to a rolling boil. In each pint jar i put 2 clove garlic, 1tsp olive oil, 1tbsp canning salt and , 1 tsp oregano. I packed each jar with the pepper slices and poured the hot mixture into them. All sealed very well. I waited 2 weeks and sampled them and they suck. I need a good recipe because mine didn't turn out so well.
Awesome, thanks for the recipe! I love doing preserves too... I always grow a zillion tomatoes every year in my garden, and I just puree as many as I can with some herbs and a couple zucchini, eggplants, garlic, etc and cook it... I collect those yogurt containers every summer, and in the fall I fill them with my tomato sauce and freeze them for the winter. A container is plenty for a pasta night for me and my husband... Depending on who's over, I may cook it with a bit of ground beef or something...
Why do tehy suck? If there is something in it that you don't like the taste of, like the garlic clove, then just leave it out. The vinegar and canning salt is what perserves it, so just experimnet al little? WHat kind of peppers are you canning bell or hot?
I would love to learn to do some canning...just bought a simple canning book and really want to do some this summer! I think this would be great way to stock up on foods and have food for your family through the winter...not to mention much healthier if you are using your own veggies from the garden. I am currently living in the city but wanting to learn more "country life skills" so that when I can and are able to afford it, I am returning to the country life asap.
