I've been a vegetarian for 5 years and was a vegan for two, but am currently just lacto/ovo-vegetarian. I generally try to stick to the vegan option when possible, though, so I was wondering if any of you had any good suggestions on egg replacement in recipes...i.e. combinations of other ingredients, NOT store-bought egg replacements. hello adamness! i take flax seeds and grind them up in yer handy coffee grinder/ bud buster. do it up really fine, then use this 'meal'. put 1 tbls flax meal to 3 tbsp of water for one egg. let this sit, and it will turn into jelly after a minute or two. you can also do this in a larger quanity and leave it in yer fridge for near-in-the-future use. a 1:3 ratio. neat-o hey? i dont like using the commercial egg subsitues all the time. i find that they are too starchy for my taste.
tapioca starch. (which is EnerG egg replacer's main ingredient along with potato starch) soy flour (1 tsp to 1 table spoons water, I think...someone correct me if I'm off) soft tofu in an equivalent weight amount.
I use the ener-g egg replacer, but it sounds that's not what youre looking for. However, if you're looking for something to make that has the texture of eggs, such as scrambled eggs, tofu would probably your best bet [Obviously, not for baking with though.] I can never cook with tofu though, so don't mark my words if it doesn't work out for you!
