Just seen Garden State, and I loved both the movie and the soundtrack.

 

I like the Forrest Gump soundtrack

 

This may sound a bit odd...
But I think my favorite movie soundtrack, especially for road-tripping...
would be that of "Dumb and Dumber".

 

Forrest Gump, Lord of the Rings, Harry Potter, Jurassic Park, Pirates of the Carribbean, Apollo 13... what can I say, I'm a sucker for instrumental soundtracks.
