i have just purchased a butternut squash and its so long since i had one i cant remember what to do with it ...only clean answers please ..........so if anyone has any tasty ideas it would be much appreciated
mmmm, roast it! peel it and chop it up, brush the pieces with olive oil and put it in the oven. So good! Or, slice it in half, don't peel it and place it cut side down on a cookie sheet. Bake until soft. Then puree with apple juice and milk (soy's good) and put a dab of brown sugar and cinnamon in and you have a lovely dessert soup! I love squash.
thanks sweet i think i will give the dessert soup a try sounds good ............. found a recipe on google .peel cut in half scoop it out then slicetwp baking apples layer the pieces on top ,melt some sunflower margarinemix with brown sugar pour over the squash and apple wrap in foil and bake for 45 mins approx so might have to buy a few more squashs.....thanks for the ideas
I actually like to use it in various things, like spaghetti sauce for one, just peel and chop as you would any other vegie. Then again when I would grow them I was always trying to find ways to use the massive amount of them that you seem to get. Another things I enjoy is making vegie packs, basically you take a normal harvest from your garden (*note It is now a law you must grow a garden *) and place them into a tinfoil package with either olive oil, or for the picky people that don't really dig vegies melted butter. Cook on your grill till everything is tender and serve (*drools on self a bit*)....
We grow them in our garden so with practically every meal, my mom stirfries them up with some other veggies or some chopped garlic. Very yummy.
like the idea of the veggie pack sounds good will def give that a try i like a good nut roast my self but not the bought variety the home made....ilove nuts
I just tried this tonight and it's AWESOME! 3 cups mashed butternut squash 8oz can crushed pineapple 1 cup brown sugar 1/4 melted margarine 1 tsp vanilla cinnamon & nutmeg to taste 1/3 cup walnuts Combine squash, pineapple, sugar, margarine, vanilla and spices. Pour into casserole dish and top with walnuts. Bake for 45 minutes at 350 degrees.
ooh i love squash... we serve it at work too, sauteed in oil with some grill seasoning is good, marinate it in a balsamic vinagrette and sprinkle with a red pepper blend and grill it, slice it up with some zucchini, white onions, and sun dried tomato and oil and grill it mmm i love to have it in spaghetti sauce and stir fry too
I just made a butternut squash casserole for turkey dinner tonight, baked squash and yams or sweet potatoes, scoop them out in a dish, add shreaded carrots, and a can of cream of mushroom soup and a cup or so of sourcream. Add salt and pepper. Blend together till somewhat smooth. Put bread crumbs ontop and bake for about an hour. Tastes like butter. Sooooo good.
i like my butternut squash roasted in the oven...then served with lots of butter and brown sugar...mmm...so good.... i also like it in spaghetti sauce as well...it adds an interesting texture to the sauce....mmm...i LOVE butternut squash
