salsa omlet

    -start wiht six large scrambled eggs, if you need more use more
    -grated sharp chedder cheese
    -cooked bacon stips


    here is the salsa,

    1 fresh tomato cubed
    1/2 onion diced
    4 jalepenio peppers ( or hotter perppers) verry finely diced
    1 red pepper (sweet) cubed
    1/4 cubed avacado
    1 teaspoon preserved diced garlic
    2tbls grated lime rinds

    I tbls spoon gound cumin
    1 tsp salt
    1tbls diced fresh cilantro



    I like to fry the onion, peppers, avacado, garlic and lime rinds before hand, but just enough to sweeteen the oinion and soften peppers a bit. then take it off the heat and add the tomatoes and cilantro . Dont add all the hot peppers into the salsa

    Mix the the cumin and salt into the scrambled eggs. Then in a large non-stick greesed frying pan on low heat, pour in the scrambled eggs. Sprinkle the rest of the diced hot peppers over the egg. now cover the frying pan wiht a large pot lid or something, and just let it sit

    in the meanwhile hopefully you've had the bacon frying

    when the egg looks hard enough to fold over, verry carfully brake it free with a spatulae. then on one half of the egg, add the salsa and as much grated chees as you want, and the bacon if you want it.

    fold the egg over itself and let it sit in the pan long anough to melt the cheese

    and their you have it, one bitchin omlet. this should be enough braekfast for a few people... oh and have the rollaids handy.

    an alternate method is to fry everything up first, then add the eggs and mix it all while its cooking. this is faster it still tastes verry good. I use diced breakfast sausage instead of bacon in this.

    sounds yummy, cousinit....course i'd leave out the bacon...but that's just me....
