Cheesy Potato Soup

    4 Cups Water
    4 Tablespoons Butter
    1 Teaspoon Paprika
    3 Teaspoons Onion Powder
    4 Pounds Potatoes, peeled and chopped
    2 Cups Milk
    1/2 pound of cheddar cheese, grated
    salt

    Heat butter, onion powder, and paprika in a large pot until butter is liquid. Add water and bring to a boil. Then, add potatoes and simmer. When the potatoes are almost done, add the milk and continue to cook until the potatoes have begun to disintegrate. Stir the cheese into the potatoes, season to taste with salt (and onion powder and paprika, if needed) and serve hot. Cheese can be omitted and one large finely chopped onion can be substituted for the onion powder.
