i thought jimi's version was the best for a long time... it's because i love jimi and his lyrics so much...
but then i payed more attention and listened to stevie's version...omg, it's so fucking perfect!!! i think it's because he has no lyrics, but he made the same effect only with his guitar. it sounds completely...perfect.
i must say i like stevie's version more. stevie ray vaughan is the best blues guitarist ever.

 

i definately like SRVs version best too...
it evokes intense emotion for me...

Sting made a cool cover version too! It's more than 5 minutes long

 

But the greatest cover was made from Eric Johnson, Joe Satriani, Steve Vai and Steve Morse Live version 8 minutes long!!! Really great!
