egg replacer issue...I THINK...

    So, twice now, I tried making a box mix of animal product free brownies, using an egg replacer...
    [Yes, I mix the water with the egg replacer FIRST]

    But both times they turned out really oily and gross...what is going on here? The box says it calls for 2 eggs and some vegetable oil... [I can't remember off the top of my head how much] and water...

    The egg replacer has the formula for ONE egg, so I double it for the mix of course...

    Am I supposed to omit the oil or am I doing something wrong???

    I want delicious brownies!!!!!!!

    maybe try using apple sauce or a banana..

    i've noticed that too sometimes egg replacer just doesn't do it

    I don't use oil when I bake, and everything comes out fine.

    they were flat, too?
    I get that sometimes. I really whip the enerG and it happens less.
    I have heard of using soda water in place of eggs. mix and bake quickly, I'd think!

    And drumminmama, yeah they were flat too. Didn't rise a bit. Maybe next time I'll try using a beater to mix the egg replacer...and if that doesn't work I'll try omitting the oil.

    Also, the bottom of the pan was basically covered in oil. After I mix the batter up, the batter looks like it should, and it tastes mixed and like it should, but as soon as I throw it in the oven, they turn out like shit.

    I'll just try a bunch of different things, I reckon. OTHERWISE, if any of you have good recipes for making brownies from scratch [vegan recipes] that would be awesome.

    dark has no dairy.
    or maybe carob (works for me in some applications, not so much others. I use both)

    Here is a recipe from veg web:

    Brownies
    Ingredients (use vegan versions):
    3/4 cup soy non-hydrogenated vegan margarine
    2 cup turbinado vegan sugar
    1 1/2 cup flour
    1/2 cup cocoa powder
    1/2 teaspoon baking powder
    1/4 teaspoon salt
    1 cup applesauce
    2 teaspoon vanilla
    12 oz bag (2 cups) of dairy free chocolate chips
    Directions:
    Preheat oven to 350. Mix all of the ingredients, putting aside 1/2 cup of chocolate chips. Spread into oiled 9x13 pan. Sprinkle remaining chocolate chips over the top. Bake for 30-35 minutes or until knife comes out clean.

    I have never used it but it got some good reviews...

    Haha I don't know, I looked through every single box mix at the store and I only found one that didn't have any animal products so that's the one I used. It looked like the mix mainly just consisted of cocoa powder, and flour, baking soda, the norm. Since you are supposed to add eggs, water, and oil, I don't see a reason for there to be any dairy products in it. Back in high school, we had to make a cake for some home-ec class, and the only thing non-vegan it contained was egg--- Maybe it's partly the mix I use that is giving me trouble. *shrug*

    I will take a look at those sites drumminmama, thanks! and, ydnim thank you for that recipe, I will try it someday for sure!
