I had my first whiff of Thai peanut sauce a while ago and I'm addicted. Does anyone have recipes for this? I need to make it in bulk and keep about 5 gallons on hand at all times.
Ingredients: 1/2 cup peanut butter (always, always unsweetened !!) 1/2 cup coconut milk (canned is fine) 1/2 teaspoon garlic cloves, minced 1/2 teaspoon minced fresh red chili (one fresh Thai chili, usually) 1 tablespoon fish sauce, "nuoc mam" 2 spring onions, sliced Directions: Stir ingredients together and heat to allow flavors to marry. Do not boil. Serve with dumplings or noodles, or as a dressing for cold chicken and noodle salad, and of course as a dipping sauce for satay.
yeggghhhh oh my god I can't get enough of that stuff. Teepi, that recipe sounds greaaaat. I'm a satay sauce fiend. I eat it with everything. ahah On stirfry, I dip veggies in it.. gahhhhh. so good. I have a slightly more domesticated recipe I use.. Haha. It's wicked easy. Ingredients 1/2 cup peanut butter (make it crunchy!) 1 garlic clove minced or 1 tsp garlic salt/powder A few shakes of red pepper flakes or a pinch of cayenne 2 tbsp water 1 tbsp tamari or soy sauce salt and pepper( to taste.. a few light shakes will do) Then, just put it all in a bowl, stick it in the microwave for 35 seconds or so, then mix it all up. Or, you could do it stovetop too, works just the same.
OH thanks sweetie, I have a terrible time out here trying to find fish sauce. I have to have my daughter from boston mail it to me. I will try yours...sounds GOOD and ez.
