any good gazpacho recipes?

    anyone have any? i love this soup in the summer. it's so good for you, and great on a hot day. id love to make it myself. please post!!!

    here's two different versions....

    5 large roma (plum) tomatoes, diced
    1 (15.5 ounce) can garbanzo beans, drained and rinsed
    1 stalk celery, diced
    1 cucumber - peeled, seeded, and diced
    2 green onions, chopped
    2 tablespoons finely chopped sweet onion
    1/4 cup chopped fresh parsley
    1/2 red bell pepper, diced
    1/2 yellow bell pepper, diced
    1/2 lemon, juiced
    1 clove garlic, minced
    1 (46 fluid ounce) can tomato juice
    1 teaspoon curry powder
    1 pinch dried tarragon
    freshly ground black pepper to taste
    1 dash hot pepper sauce

    In a large glass bowl, mix the tomatoes, garbanzo beans, celery, cucumber, green onions, sweet onion, parsley, red bell pepper, yellow bell pepper, lemon juice, and garlic. Pour in the tomato juice. Season with curry powder, tarragon, pepper, and hot pepper sauce. Chill in the refrigerator at least 2 hours before serving.

    2nd version- 4 cups tomato juice
    1 onion, minced
    1 green bell pepper, minced
    1 cucumber, chopped
    2 cups chopped tomatoes
    2 green onions, chopped
    1 clove garlic, minced
    3 tablespoons fresh lemon juice
    2 tablespoons red wine vinegar
    1 teaspoon dried tarragon
    1 teaspoon dried basil
    1/4 cup chopped fresh parsley
    1 teaspoon white sugar
    salt and pepper to taste

    In a blender or food processor, combine tomato juice, onion, bell pepper, cucumber, tomatoes, green onions, garlic, lemon juice, red wine vinegar, tarragon, basil, parsley, sugar, salt, and pepper. Blend until well-combined but still slightly chunky. Chill at least 2 hours before serving.

    Lobster gazpacho
    2 1/2 pounds beefsteak tomatoes, peeled, roughly chopped
    2 red peppers, roughly chopped
    2 onions, roughly chopped
    2 cucumbers, roughly chopped
    4 stalks of celery, roughly chopped
    1/4 cup minced shallots
    2 tablespoons minced garlic
    2 tablespoons fresh grated horseradish
    1/4 cup finely chopped fresh cilantro
    2 cups V-8 juice
    2 tablespoons Worcestershire sauce
    Juice of two lemons
    Pinch of cayenne
    Salt and pepper
    2 pounds cooked lobster, meat removed and shells discarded, claws and tails intact
    1 cup fresh herb vinaigrette

    Using a food processor with a metal blade, combine all the vegetables, shallots, garlic, horseradish, and cilantro together. Puree the mixture until slightly smooth. Add the V-8 juice, Worcestershire sauce and lemon juice and puree until smooth. Season with cayenne, salt and pepper. Remove and refrigerate for 6 hours. Slice the lobster tail meat into 1/4-inch slices. In a mixing bowl, toss the lobster meat with the herb vinaigrette. Season with salt and pepper.

    this is my all time favorite recipie for gazpacho;


    in your blender (I use the cuisinart, it's better):
    10oz cold tomato juice
    1/2 medium cucumber
    I medium tomato, cut up
    1tbs sugar
    1/4 cup red wine vinnegar
    1/4 salad oil

    blend that all up (not too smooth, you want some really small pieces of veggies) then add:

    2 1/2 cups tomato juice
    1 med. tomato chopped
    1/2 med cucumber, chopped
    1 small onion finley chopped
    2 celery stalks, diced
    2 green onions, green part only, chopped
    1/2 zuchinni, chopped
    1 small green pepper, chopped

    now, it says to chop all the other veggies by hand, but I throw them in the cuisinart and just give it a few quick pulses, till they're chunky and stuff, why do all that work by hand if you don't have to, right? I also use a whole zucchini, and omit the green pepper, and I only use one stalk of celery. You can add or subtract any veggies you liek though. I also throw in one of 2 raw cloves of garlic, and give it a bit of salt and pepper and onion or garlic powder. This recipie makes ALOT of soup, especially cause it doesn't stay good all that long, so I ussually cut it in half

    don't cook any of the veggies though, the texure is way better raw, I loooooove this soup, in fact, I just made it 2 days ago!

    mmm... gazpacho! what a wonderful idea... I'll definately have to try one of those.... that lobster one seems tastiest!
