    I have been vegetarian, [ almost vegan ] for almost 12 years now, i love animals to bits, and prefer them to some humans i know, i am new to these forums, and so looking forward, in particular, to exchanging advice on this veggie forum.

    I will eat vegetarian cheese[ non animal rennet] and i drink milk, i won't eat eggs, nor do i eat fish.

    I have just this minute made a lovely mashed potato with a difference, some of you could try, it really is heaven....

    Make your mashed potato from scratch, use a floury potato like Estima or Cara, dice potato into small chunks it will cook quicker, meanwhile steam some cabbage, finely chopped, and fry off in extra virgin olive oil, an onion, till nice and brown to almost burnt.
    When your potato is ready to mash, [by the way i never add salt to anything, it is optional, but i use black pepper] add black pepper, a little olive oil, or bertolli spread, the fried off onion, and the cabbage, and mash together, the potato may change colour a little bit, don't worry about this, it is absolutely yummy and sooooooo tasty.
    Let me know if you have tried this.
    You can add all kinds of things to make your mash different, you can make it cheesey, use spring onions, chives, carrot, parsnip, all manner of things to turn ordinary mash into something really much tastier........enjoy.:)

    just curious, how can you tell if a cheese is rennet-free? I've never seen it listed. what brands do you use.

    If a cheese states on the cover "suitable for vegetarians" then you should be alright, some cheeses just have a little "V" on, it is against the Trades Discription Act to state on a product that it is veggie friendly, if it is not.

    There are a lot of hidden by-products you could be eating, and not know, for example, pink food colouring, if a cake, we'll say, has pink on it, and says it is suitable for veggies, it should be ok, but if it is not suitable, and does not say, it will be Cochineal, [proper juice from little beetles].

    Go to Googles search engine, and put in animal derivatives, or foods containing animal derivatives , you can choose the most informative websites and look at a long list of all manner of products, some may shock you, like the shine on chocolate peanuts is Shellac, an animal derivative, also put e numbers in the search engine, the only emulsifier i know that is veggie friendly is E147, others aren't, i never buy capsules, and my doctor gives me an alternative on prescription as the capsule shell contains gelatine, you have to be on your guard, constantly, i hopes this is useful to you all, let me know how you get on.

    If you choose cheese you need to look at the ingredients and it will say something like rennet (non-animal based or ?) or beef or ? rennet.

    I think cheese that says suitable for vegetarians is non-animal rennet.

    There are some vegan cheeses out there too.
    Tofutti do a good cream cheese and cheesy is another though i will have to double check that name.
