Lunch and snacks

    Hey guys and gals...be interested to know what recomendations you could make in terms of something quick and easy to take with and eat on the go. I'm a busy college student. At school two days a week, and when I'm not working on school work, busy with other projects for the rest of the week! So any snacks suggestions that are quick, easy, and not terribly expensive would be greatly appreciated. I'm also looking for something to give me that energy boost during the mid-day slump...thoughts?

    Falafel. You can even buy the mix(a couple of dollars) where you just have to add water, mix and fry in a frypan. Or get a good recepie. I used to make batches that would yield like 20 or so Falafel balls than keep them in the fridge and take like four to snack on throughout the day at uni or work.
    They are chickpea filled blessings.

    Mmm Falafel :p...actually, I've never had any! But I've heard it's good. :p Is it like Indian food or what?

    Fresh fruits and vegetables are always an option. Those are my favorite on-the-go snacks.

    Also, if you cook large quantities of things on a day you have off, you can freeze it and then thaw it. I like to do that sometimes too. :)

    Make loads of soup, you can freeze it and then just heat it and put it in a thermos flask to keep it warm during the day.

    I used to make really good snack wraps--whole wheat tortillas with lots of hummus spread on 'em, and spinach or whatever other good lettuce there was in them. Wrapped it all up, and it was great! I think I'd have to trek halfway across town to find hummus here at school now. Midget, what college are you at?

    Yeah that always works out well. Reminds me aswell I still have some potato and leek soup in the freezer that I made a week back.

    Also for energy a banana is very good. Maybe bring a banana or two and some other fruit.

    I practically live on spicy popcorn...waaaaaaay cheap if you get it in kernels and pop it on the stove.
    I just put a bunch of hot sauce in a plastic bag then put the popcorn in and shake it around. Mmmmmmmm....you can put nutritional yeast on it afterward and it's like spicey AND cheesy ANNNND vegan! :)

    - edamame and corn (frozen) with a little earth balance

    - nut butter (almond butter's my fav, but peanut better's more wallet friendly) and apple

    - yogurt with fruit

    - bake a nice sweet potato (i really like white sweet potatoes, which aren't as sweet), and very quickly stir fry some simple veggies; toss together for a quick, filling meal

    - my personal favorite - find a samosa or turnover recipe. make a whole lot on the weekend. they stay good for a week, at least, and they're good room temp. really mobile, but better with chutney or other dip.

    - simple dal soup - take those teeny red lentils, boil them in a bunch of water (apx. 1 cup lentils to 2 cups water), add some canned tomatoes (i like those organic fire roasted kind) and sauteed onions. add some indian spices (mustard seeds, first fried with the onion), and salt to taste. let it simmer for a while; the lentils will still be somewhat intack, and therefore easier to eat. mmmm...yummy, filling, and healthy! eat with some crackers, if you desire.

    Ah Samosas! They absolutely rule, real great snack. I don't like alot of chutneys though.

    The sweet potato idea sounds likea really good one. :D

    Just a quick vent...school food is a rip off! Well, OK the salad I got the other day wasn't bad, but I jsut paid $3.49 for this tiny wrap, which had rice, teriaky, and tofu inside. :p I'm still Hungry...but I'm pretty sure I can survive until I get home. I gotta go to the store soon...get lunch stuff for next week, before I go broke. :p I'd love some celery and peanut butter right now. :p Too bad, at the moment I have no celery, and am out of peanut butter...for now at least.
