VERY quick Mexican meal

    For those of you who love Mexican food..

    Get some black beans, and shovel in some salsa. Mix it up and heat it. SO SIMPLE, SO TASTY. Tons of fiber, plus lots of protein, which lots of vegans miss out on.

    id sugest making up your own salsa....ie toss your hot beans into this.


    1 cup diced fresh mango
    2 cup diced fresh tomato
    1 cup diced red bell pepper
    1 cup diced red onion
    2 tablespoon minced garlic
    1 jalepenio pepper, minced ( or substitute more and or hotter pepers)
    2 teaspoon ground cumin
    2 tablespoon. olive oil
    4 tablespoon red wine vinegar or sherry vinegar
    ½ cup fresh lime juice
    zest of 2 limes
    freshly ground pepper
    dash Tabasco or other pepper sauce
    1 cup coarsely chopped fresh cilantro

    let the onion soak in the lime juice for 20 min befor addding the rest of egredients int a bowl. be sure to let everything sit for 2-3 hours before eating
