if you are directly planting the seeds outside, wait until all danger of frost has passed. I'm not familiar with the planting zones in the UK, but I bet there's something similar to our USDA hardiness zones over there that will tell you when there is no danger of frost at night anymore.
later may/early june in our part of the world dude, when it it's t-shirt weather, yer sunflowers are good to go
What Oz said. But you could plant them around mid April if you start them off in a greenhouse or tunnel. Thats what I do. And don't leave them exposed to wind, and its no harm to stake em sometimes either.
They don't fancy being transplanted much so if you start them early a good idea is peat pots...you can plant the whole pot when its time. I also save toilet paper rolls and put them upright in a small box fill them with dirt and start some corn seed early as corn does not like to be transplanted either. Then I plant the whole tube when its time...give me some early stalks.
