help needed

    hi,
    i am hoping someone can help me. i have been vegetarian for about 15 years since my early teens but really need some help with my diet! has basically consisted of convience and frozen food all these years, next to no fresh fruit or veg and now think all this rubbish is catching up with me! i am constantly exhausted, have no energy and just seem to want to sleep all the time! am useless with cooking and work shifts so the last thing i want to do when i come in late is start messing around waiting ages for something to cook. i take vitamins but obviously this is not enough, can any help me revamp my diet and think of quick, easy and tasty ways to healthier eating??? i have not got a clue where to start and am under pressure from family, friends and workmates to start eating meat again.

    well i absolutely adore fruit. fruit are like a healthy snack, and i find very addictive. it fills me up, however i do apparently have a tiny stomach so it takes nothing to fill me up.

    Some of my favs...
    Those refridgerated Bags of greens
    Fresh Carrot chips
    Apple wedges
    Tomato sandwhiches
    Tomato basil soup(canned tomatoes, with garlic in basil-put in pot heat through, and blend with a stick-blender
    Couscous literally takes 5 minutes to cook
    I really don't like most soy products, like soy dogs, tofu, etc, but I do adore the vegan Boca burgers, with a little mustard and some sliced onion/tomato
    Brown rice with garlic and tomatoes
    sliced cucumber salad(cukes, onions, garlic, splash vinegar, let chill overnight)
    Pot of beans, lentils, etc(soak overnight/sprout, put in crockpot in morning, done at 5p!)
    Pickled beets
    Fresh veggies already cut up-celery, cukes, toms, carrots, etc
    Bag of broccolli available in produce, steamed
    etc,etc,etc

    What I would suggest is cooking then freezing your meals. That way they will be "convenience" food but still be good for you. Take a few hours a week and cook a lot of food and put it in freezable containers. It would be best to have a friend in on this so you guys can split food costs and have a variety of food instead of 3 gallons of chili or something.

    Also- The more you eat fresh fruits the more you will like them. Another thing- many people overcook their vegetables, to the point of mush. This is one reason why a lot of people don't eat enough veggies- they don't taste good when cooked wrong. Carrots are supposed to be orange, even when cooked. Broccoli green, even when cooked. None of that grayish mushy stuff, no one wants that. Cook your veggies til tender crisp and season them and you will enjoy them much more.

    An easy one: steam some broccoli and then put a tad of sesame oil, some soy sauce, and sesame seeds or nuts. Nice Asian-style veggies that go well with a lot of food! Hope this was helpful and good luck!

    Easy steamed veg...Take some veg, broccoli, greens, whatever, and wash and cut into bite sized pieces. Put a half inch or so of water in the bottom of a bowl. Add the veg and cover with plastic wrap. Microwave for 2-3 minutes, depending on the veg. Season and eat!
