When I cook I generally know what seasonings to pull out of the cupboard. There is not three-tiered spice rack in my kitchen because most of the dried herbs and spices come from difference sources... not to mention the fact that some things are needed in larger quantity than other things. Cinnamon goes down very quickly whereas powdered mustard or bay leaves can sometimes be discarded before they are used up. At times I will read the back of labels to see if the manufacturer thinks I should put this spice or herb in whatever it is I am cooking. These days there are people who can plug in scents into their outlets. If I had to smell a room of roses all day long I think my head would explode. Personally, I'd much rather breathe in the wafting aroma of oregano and basil. Any spices or scents that you particularly like in your food, rooms, life? Anyone carry an aroma in a pouch? Anyone out there even reading this?
I know what ya mean about the spices Brother! GOOD to see you on BTW! I keep my spices in a box, and i look for certain color lids, but I will take inventory now & then. When I bake I aim for the scent of Grandma's Cookie Jar! Sucks that I'm out of brown sugar.
I love the scent of many herbs. When I'm out in the garden I usually will pick a sprig of oregano or majoram and walk aroung just sniffing it. By my bed I have a little clay bottle with a glaze on the bottom and up the sides about half an inch. I pour lavander oil into it so I get the scent at night while I'm sleeping. I shop at the Amish compound near here. There herbs and spices are alot cheaper than in the grocery store. I used to go to the food co-op when we lived in the city and buy alot of spices in bulk. I go through alot of cinnoman,cumin, red pepper flakes,oregano,thyme,basil. Some of these I grow myself. And dry. I love fresh basil. I have ALOT of wild roses around here and they are full of rose hips for tea, I also grow bee balm and I love tea made with that. We have tons of sassafras around. And when we cleared a bit of land for the house we were always smelling it. We make tea with the roots quite often. The honeysuckle just hangs in the air around here, I love to have the windows open or sit on the porch and just smeeeelllll..... Go to see you around Duncan, hope all has been well.
cumin , cinnamon and basil ,, are what i use the most... also use a good bit of oregano, all grown here but the cinnamon my favorite of all is fresh cilantro

I hang garlic by all the doors and windows-- not only does it remind me of my childhood days in Sicily, it keeps away flies. And, I can't remember the last vampire attack.
