Ok im not a vegatarian but I've been working in a kebab shop for 6 months now and first had Falafal the otherday and I must say, damn it was one of the niciest things I've ever eaten.
Falafel are little ball shaped patties made from chickpeas, spices and probably some other stuff. You can make your own or just buy ready made. And I agree, they are good. Tofu is basically curd made from soya beans. It comes in varying degrees of firmness and whilst being bland tasting it easily absorbes the other flavours. It is something of a staple in veg*an cooking, though not to everyone's taste. Hope that helps
