has anyone ever attempted making their own soymilk at home? yesterday my mom randomly came across instructions/recipes for this, and she and i are going to try one of them i think. apparently there are soymilk machines too...anyone ever used one of these?
Yep, I make my own soymilk (no fancy machines, mind you lol), and it works beautifully. (what sucks tho, is that you dont get the calcium they put in regular soymilk...Oh well. this is cheeeeeeeeap and good) Okay, what I do, is I soak soy beans overnight or all day, then I blend them with water, 1 part soy beans, 3 parts hot water (I do one cup soy beans to 3 cups water, only because that's what will fit in my blender without a massive blender eruption from hot water... I usually do several batches, because just one cup of soy beans doesn't make much). Keep blending til its pretty much just one consistancy, sorta milky and you can barely see the little specks. Then, strain into a colander with a cheesecloth lining it, over a big pot on the stove.Once you pour it all in, squeeze the cheesecloth tightly at the top so all the milk comes out (you'll be left with the Okara, and you can use it for baking or making soyburgers or whatever. google it for recipes). So now you're done with the strainer/cheesecloth deal, just bring the milk to a boil and then reduce to a simmer for 15 minutes or so, and stir every so often so it doesn't for a skin on the top. You can also add a touch of vanilla or honey or whatever (chocolate syrup, mayhaps? ), to your liking. Then just keep it in the fridge.. Mine usually keeps for a week or so...
We-elllll.. It thickens it just a tiiiny bit. If you don't, it's kinda watery, and sometimes seperates a bit... Boiling it brings it up to a more milky consistancy. It told me to do that on pretty much every website I looked at for homemade soy milk. And it works.
my mom and i did make soymilk yesterday, and it came out pretty well. it's got a bit of a "beany" flavor, but otherwise is pretty good. i added vanilla and sugar to this batch (which it took a lot of)...maybe i'll try flavoring it chocolate next time.
