Mom to Mom Recipe Idea Swap!

    Sometimes meal time seems to repeat itself...esp, if you have fussy eaters.. Maybe we could all share some of the favorite things we make our little ones, or what their favorite things to eat are! Sometimes new ideas that you can introduce to your kids can end up being a crowd favorite!!!:)

    Simple apple crisps work really well for the picky little boy I babysit..

    2 tbs each: oats, brown sugar, cold butter. Cut together until it's sandy mixture.

    Sprinkle over a peeled, seeded, and sliced apple. Bake at 350 until the mix is golden brown.

    That sounds yummy!! I lucked out, my girls eat anything. They love to eat raw onions, weird I know!! But I feel change is alwyas good!! A lot of times for snacks I give them baby carrots, pepperoni, a few crackers, apple slices, cheese, and dip! They love it! Plus it is a good healthy snack!:)

    C won't eat this, but I make it almost every day. Healthy for moms! And soooooo quick, easy and tasty; I LOVE this soup.

    2 c. water
    2 Tbs. olive oil (I use one Tbs. or less, cause I am still packing baby weight)
    1 Tbs. light miso
    2 Tbs. soy sauce or liquid aminos
    juice of one lemon
    1 clove garlic
    1/2" chunk washed, unpeeled ginger

    Whirl it all on a food processor or blender. Serve cold or room temp. I pour it right into a tall tupperware type container and drink it. mmmmmmmmm

    Grilled Zucchini Sandwiches

    Zucchini peeled and sliced lengthwise
    Alfalfa Sprouts
    Mustard
    Cheese shreds
    Slices of bread

    Brown zucchini on both sides, build sandwhich with other ingredients (as much as desired) brown sandwich on both sides, serve hot.

    Filling and a crowd pleaser!

    hippyfreek, those apple crisps sound so yummy! My mouth is watering as i type this....
    I made a macaroni and tomato casserole the other night that was surprisingly good....and very cheap!!!

    8 cups of water
    11/2 cups of elbow macaroni
    1 can condenced tomato soup
    1 can sliced tomatoes
    2 cups grated cheddar cheese

    boil water, then add the macaroni...cook until it's tender but firm.
    Drain.
    Add 1 cup of the cheese, tomoto soup and sliced tomatoes, and mix
    Turn into a 3L casserole dish and sprinkle remaining cheese over the top.
    bake at 325 (I think that's right.....I'll have to go check) for about a half hour....

    I HATE tomoatoes, and I actually quite liked this.
    If you want, you could add corn and ground beef.....

    i'm not sure that i wanted to post this, (family recipe), but I can't deny the mama's here of one of my family's favourite dishes!


    Chicken Brocolli (I usually double or triple this, it makes AWSOME left-overs)

    enough brocolli to cover the bottom of a casserole dish or roaster, sliced up
    (you can also use asparagus, but I've never tried it...)
    3-5 chicken breasts (sometimes I use thighs, which are awsome, too)
    1 can of cream of chicken soup
    1/2 mayo (NOT miricle (sp?) whip, it tastes funny)
    1 tsp lemon juice (I usually put a bit more)
    1 tsp curry (again, i usually add a bit more)
    salt
    pepper
    seasoning salt
    cooking oil
    grated cheddar cheese

    Cook the brocolli in about 2 inches of salted water in the mircowave until the brocolli is bright green.
    Cut the chicken into chunks or strips, and fry up in a frying pan or wok with cooking oil, sprinkling with salt and pepper and seasoning salt until very well seasoned.
    mix the caned soup, mayo, lemon juice and curry in a bowl.
    pour the broccolli into the bottom of your casserole dish or roaster.
    drain the chicken once it's well cooked and pour over top the broccolli.
    pour the soup mixture over the chicken and broccolli.
    Sprinkle the cheddar cheese over the top....use as much or as little as you want....I load it up with it :p
    bake at 325 for 1/2 hour, and voila
    make about 4 cups of rice and serve with it, scooping the chicken broccolli over top of the rice and mix it all together.

    I have to make this now.......*drools*

    That sounds yummy, I make a real good apple crisp that uses maple syrup instead of sugar. Of course I can't find my recipe book right now, but if your interested let me know, I will post it later

    I need to learn to cook. The only thing I can really cook is pasta and white sauce- and my white sauce never comes out thick enough.

    I just made these, and they got a "mmm num num!!!" from ds (who is 2).

    MILLET FRUIT BALLS

    1 c. cooked millet (although I can't see why it wouldn't work with other grains, especially couscous)
    1/2 c. raisins
    1/2 c. dried apricots
    1/2 c. dried apples
    1 Tbs. frozen orange juice concentrate
    1 tsp. grated orange rind
    1/2 c. chopped pecans
    1/2 c. chopped almonds

    Chop the apricots and apples. Mix everything but nuts together in a bowl, or stick it in a food processor. You could also put nuts in the mix I suppose.

    Roll into balls or a big log. Roll in nuts. I would say use ground up nuts as opposed to chopped because they stick better.

    Quick, easy, healthy and sweet snack. These are almost like candy!

    6 cups apples (or combination of any fruit**), chopped
    1 teaspoon cinnamon
    1 1/2 tablespoons whole wheat flour (or regular flour if you prefer)
    6 tablespoons pure maple syrup
    1 cup whole wheat flour
    1/2 cup oat flakes
    1/4 teaspoon sea salt
    1/4 teaspoon baking soda
    1/3 cup margarine

    (**if you use rhubarb, add 1/2 cup more maple syrup**)

    Directions
    Toss apples with 1/4 tsp. cinnamon and 1 1/2 tbsp flour in baking dish (I usually use a 9x9 dish). Drizzle with 3 tbsp maple syrup. Combine flour, oats, salt baking soda and the rest of the cinnamon. Cut in the margarine and drizzle on the rest of the maple syrup. Mix with a fork and spread over apples. Bake 45 min at 350 degrees (or until apples are tender)

    (apple and rhubard make an awsome combination.)

    Mmm, that sounds fantastic! Much faster than the regular old fasioned apple crisp I've made. I'll have to try that sometime, I know my kids would love it!

    Mmmm All these Apple crisp recipes are making me hungry.. i bet the one w /maple syrup is yummy!!



    Here is what I call my garlic-cheesy noodles:
    Everyone loves these, and they are better than anything you could ever buy in those "packets"

    For a quick batch:
    I put 1c- 1 1/2 C, of uncooked pasta in a microwave safe bowl, and put just enough water to cover the noodles.
    Microwave for 8-10 minutes (may vary)
    When done, drain but don't rinse....
    Now add:
    2T. Butter or Margerine(or whatever you use)
    1T Olive Oil
    Salt and Pepper(to taste)
    Garlic Powder (to taste).. I am generous !
    Parm cheese (1-2 T or so)
    Italian Seasonings or Basil (to taste)
    Stir it real good, and make sure it all blends well, and the butter melts thouroughly.

    You can always add chicken or deli meat, and/ or veges
    Possibilities are endless!!!:)
