Chicken Chimichanga

    Heh sorry if anyone has already posted a recipe similar to this but I thought id share its really simple to make.

    Ingredients -
    1. Boneless Chicken Breast
    2. Soft Tortilla Shell (Commonly used for tacos)
    3. Sour Cream
    4. Guacamole
    5. Vegetables, whatever vegetables you want depends on what you like. I suggest diced tomatos and very finely shredded lettuce.
    6. Hotsauce
    7. Butter

    First you want to start off by putting a pan on your stove at the highest temperature to get it hot. Prepare your boneless chicken by cutting it in small peices. 1x1 inch squares are around the best size. Turn the heat of your pan down and put some butter in. Slowly place the chicken in to not splash the butter back up on you. Stir constantly until the outside of the chicken gets brown. To make sure you got the whole way through you may want to chop your largest peice in half to make sure it is thoroughly cooked. You may have to add butter while cooking so that the chicken does not begin to stick into the pan. Next take your tortilla shell and place the chicken on it. This is where you probably want to add hotsauce if you plan to. You may have to expierement on how you want your wrapped. I will try to describe how I do it but it will be farely complicated to put in words. First off take the bottom ends and fold them up. Now because you want it to be relatively thing you are going to have to fold the sides over once then on top of the chicken. Place it so the folded side is on the bottom so it doesnt become undone. Now heat a pan or griddle up. I prefer griddle. Place the folded on top of the griddle first. Make sure not to burn the tortilla. Just get it crisp so that the folds dont become undone when eating. It will get too messy then. After you have your tortilla cooked to the point of which you want it. Take your lettuce and shredd it into strips. An easy way to get small strips is to chop the head of lettuce in half, then chop one of the halfs in half, after that place it on a table and begin from the side and cut the whole length down then continue back. That may be hard to understand sorry. Place it on top of the chicken wrap. Use as much or as little lettuce as you like. I prefer more so that I always get some lettuce in every bite. Next put some finely chopped tomatoes on top. Next put your guacamole and sour cream on top of all that. Spread it around as much or as little as youd like. You can then put whatever spices etc you want on it. Get a knife and fork and begin eating :)

    I know alot of people put everything in the wrap then cook but then your tomatoes or lettuce gets dried up and isnt as good. Some good old refried beans are great with this too.

    I just ate a great chicken & cheese chimichanga while I was on vacation. Damn, I'm so hungry!
