Corn!!! keep it in the husks and grill it that way ... its soo good and its easy to take off the husks that way ... not as messy as the other way .. veggies in tinfoil is good too ... if you bring a cooler put some tofu pups( veggie hotdogs) in there u can get them from Acme or Giant. Vegan marshmellows .. you can order them from peta or pangea vegan store. fresh or dried fruits,nuts,boca or morningstar burgers and lots of water I cant really think of anything else at the moment but have a great time !!! There are a lot of veggies that I just throw in the coals and let cook like corn, potatoes, peppers... You can make/bring skewers and hang all kinds of stuff off them and cook them over a fire. Put the veggies/tofu... in a baggie and marinate on your way to wherever you are camping. Keep a few bags of marinated veggies in the cooler. Make tin foil packets! these are great on the BBQ too. Just wrap up your veggies and tofu or whatever you want in foil pouches with some seasoning and sauce, I love lemon juice and olive oi, and throw it on the fire. Of course there is granola (make your own!) and all kinds of dried goods. lots of good ideas listed already!
