i LOVE veggie sandwiches but my parents are not enthused about me eating the same thing meal after meal. do any of you have any ideas for interesting vegetarian sandwiches? thanks!
heh, i just make a salad in a sandwich, basically. cucumbers, onions, lettuce, tomato, and pickles. then add some salad dressing. unless that's what you already do, then sorry i'm not helping.
These are my fave fillings... Cheese (and pickle) egg Marmite veg*an pate (mushroom, pepper, olve etc) soy bacon with ketchup
My favorite veggie sandwich is a combo of avocado, tomato, cucumbers, sweet red onion, bean sprouts, with a little italian dressing on an organic croissant roll.
I had a very very good sandwich yesterday, the filling was with mayonnaise and baby corn, the baby corn was steamed. I also used lettuce leaves liberally. Maybe some shredded cabbage could go into the mix there.
You might want to experiment with vegetarian cold cuts; they're available in better health food stores. Another great option is falafel. It's made from chick peas and good falafel is tasty. You can get a mix and make your own.
Grilled cheese and tomato sanwich. Use swiss cheese, an but lil slices o tomato in it. Sooooo yummy,mmmmmmmmm.
Humous with mixed lettuce leaves in pitta is delicious. Theres a really lovely organic cafe near me that blends either avocado or red peppers into the humous too which is a nice twist. Feta Cheese with sliced olives, baby tomatos and mixed lettuce leaves in a tortilla wrap is yummy yummy too Love Clairexxx
I love humous!! But it's treat I rarely get to enjoy...my hubby doesnt like spending money such frivality. does anyone have a good recipe to make homemade tahini?
Okay...Well sometimes I make a salad sandwich (just what it sounds like), Tomatoes and soy mayo, pickles and soy mayo, hummus and lettuce.
Here's another sugesstion. You know those jars of artichoke, they're already seasoned; they make a really good sandwich filling. That baby corn and mayo sandwich sounds good also. I tried carrots, egg-free mayo, and artichoke on a sun dried tomato bagel too. That tasted really good.
Orangic Whole Wheat Bread, Toasted Mashed Avocato Sliced Tomatoe and lettuce and/or sprouts fresh from the garden is best! Protobello mushrooms sliced (you can use other mushrooms, but protobellos are best) Vedallia onions, sliced Mayo and/or Goddess dressing. You know, whatever you have in the house! cynical_otter - if you buy dried chick peas you can cook them and blend them and season them to make your own hummus!!! VERY CHEAPLY!
one of my favorites is a CLT ~ Cucumber, lettuce, and tomato. I like it on toasted ww bread with a little mayo, or italian dressing. Another is an avacado sandwich with lettuce and tomato. I also love a nice grilled tofu sandwich. hummous and baba ganoush also make a nice spread for sandwiches.
If you fry some italian tofu, slice a tomato, and use spicy hummous maybe some baby spinich, it's really good. also if you mix black beans and corn in melted cheese.... both really good.
Sounds yummy, but what is italian tofu? I don't think it is available in our area unless this is a way of preparing tofu.
