in times of need, the first thing i turn to is food. when i'm bored, depressed, angry, lonely, anxious, drunk, stoned, or even hungry, i eat to make myself feel better. and by FAR the most comforting food for me is my special version of potatas bravas - fried potatoes covered with a sharp, spicy mayonnaise-chipoltle dressing, guacamole, chopped tomatoes and green onions. it's the most perfect, divine mix of hot and cold, light and filling, crispy and goopy, dry and juicy, spicy and cooling. it's heavenly. i always feel better after i eat a big heap of it.
i also love pasta with a spicy tomato-olive-eggplant sauce. mmmm...
    so what's your comfort food?

    Swiss cheese spinach mushroom quiche
    Two deep dish pie crusts
    two big bags dry beans
    cheesecloth

    cooked drained spinach
    sliced mushrooms of choice

ohhh this all sounds so good!

potatas bravas are super easy to make. cut some potatoes into wedges and boil them till they're almost done, and then drain them and transfer them to a frying pan and fry till crispy. new potatoes are great for this. make guacamole with 2 or 3 very ripe avocados, juice of 1 lime, one small tomato chopped small, and some chopped green onion. the mayonnaise-chipoltle dressing is just mayonnaise with some chipoltle sauce mixed in to taste. chipoltles are smoked jalepenos - very spicy. if you don't have chipoltle sauce, just puree some chipoltles. you can buy them in cans with yummy adobo sauce.
so when the potatoes are done, you drizzle them with the chipoltle mayo and then drop a big wad of guacamole over them, and then you sprinkle the whole mess with chopped tomato and green onion. mmmmmm. *drools*

    and for dessert:

frozen whole blueberries with milk/cream and sugar. the milk freezes on the blueberries and turns into this lovely purple slush with juicy berries in it and sugar all along the bottom. it's heavenly. i don't eat blueberries any other way anymore.
