I've been picking lots of blackberries to freeze for my morning smoothie. I've got lots frozen, and I've made jam, cobbler, pie, and muffins. Anyone got any other good recipes/ideas for what to do with lots of berries? I posted this in desserts, but even if it's not a dessert. Thx
Frozen berries are great mixed with a little orange juice (but only a little bit) and blended to make a mixed fruit sorbet. You can also go down the unheathy route and mix them with cream or icing sugar to make something with a more ice creamier texture. stewed fruit is quite nice, espcially if you jar it and then can heat it up on cold winter mornings to on porrige, cereal etc...Blackberries go really well with stewed fruit like apple and maybe even rhubarb. I've also heard that you can use black berries in stuffing for some meats - mostly pork and poultry. You can also simmer them and add dark red wine and reduce them, and make a type of berrylicious red wine sauce....but i'm a vegetarian so I can't vouch for the awesomeness of blackberries + game meats.
Blackberry wineut the blackberries in a stoneware crock.Put a clean cloth over the top.Let ferment 7-9 days. Then strain.Put the juice back in the crock.Add sugar (5 pounds to every 5 gallons.)Add 1 package of yeast to every 5 gallons of juice. Let it work for 14 days. When it stops bubbling, strain the juice into bottles or jars. Let sit for a 1 day, then strain the juice again. Repeat each day until there is no sediment in the bottom.Maybe you'd look at Beverages: What are you drinking tonight(Page 35,#350.)
I usually make pies and cakes with my berries - I've a few different kinds growing in my yard every summer; always is a treat to thaw a container for winter baking!
I like blackberries very much and Blueberries..I've got a very nice Blueberry recipe that I am sure that would enjoy very much Healthy Blueberry Pancake Ingredients 1 cup soy milk 1/2 cup water 1 cup whole wheat flour 1/2 cup stone ground cornmeal 1 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1 cup fresh blueberries 2 tablespoons vegetable oil Method Preheat oven to 200 degrees F (95 degrees C). In a small bowl combine the soy milk and water. In a large bowl, combine the flour, cornmeal, baking powder, baking soda and salt. Stir in the soy milk mixture just until combined. Fold in the blueberries and let the batter sit for 5 minutes. Lightly oil a skillet or griddle and heat over medium heat. Pour about 1/4 cup of batter onto the hot griddle and cook until pancakes are bubbly on top and edges are slightly dry looking. Turn and cook until pancakes are browned. Transfer to a baking sheet and keep warm in the oven while cooking the remaining batter. Serve warm with syrup or jam. Source:Healthy Blueberry Pancake
im not very keen on blackberries ...and by that i mean, the technology thats converted the so-called "white-collars" into slaves, and it IS presented to them as dessert!
