I make my own almond milk when I can, and get Almond breeze when I can't, for cooking. rice milk on cereal, but when I did buy milk, I bought skim. I made cashew milk to sub for cream on a couple of occasions. Pretty good. I had the salt balance a bit off and needed too much sweetener. and you, my friends?
I use Rice Dream and have for years. My son has been drinking it since he was 14 months old as well. we use the vanilla flavor. Now that I am vegetarian I've wondered about using it in cooking. Would probably have to use the original flavor and not the vanilla. Anyone ever used it to cook with. Kathi
Soy milk for me, certain brands of course. I know 8th continent is not vegan, as certain nutrients are derived from animal products. I prefer Silk soymilk.
I prefer Silk Light Soymilk. The light stuff seems to have less intense flavor to it, and I like my "milk" more bland. I use it for everything. I don't care for rice milk either, and most other soymilks I've tried dont compare to silk for me.
I like Silk brand soy milks best, but I don't mind other soy milks either. I actually prefer the taste of soy milk over dairy milk, even if it's not Silk brand. Rice dream is also good if you like rice. It has a strong "ricey" flavor to it. But it's also EXPENSIVE!!! However Rice milk usually seems to be better to drink straight or use on cereals than soy milk, UNLESS the soy milk is the Silk soy milk brand. If I have access to Silk soy Milk I use it for everything, if not, I use rice milk for straight drinking and cereals if I can afford it, and regular soy milk for cooking. I'm allergic to a lot of nuts, so I haven't dared to try the nut milks.

Soy has a hormone that mimics estrogen. It threw my cycles in total chaos. However, this is because I'm a soy milk nut and enjoy it so much that I used to drink something like 2-3 glasses per day. I'm extremely wary of it now and I never exceed one glass of soy milk/day. I also have a moderate amount of soy products for food, so it's more than enough. I don't take any dairy products other than the odd icecream (outside) - at home, I have soy icecream also. It just tastes better. However the soy icecream or milk doesn't mean less fat. Silk chocolate is good. I rely on the brand So Good a lot, and their products. Rice milk tastes peculiar and that I don't particularly relish rice itself, makes it hard to drink. If I'm desperate for a milk substitute and there's no So Good, I'll defer to Rice Dream (rarely).
I tried Almond milk the first time this weekend. Much better taste than soy milk. Which is a better substitute for dairy in cooking?? Specificaly, white sauces. The chemestry of fat plus glutten must vary depending on the type of milk. (On the other hand, most of the fat comes from the butter (margerine for vegan) and not the milk.)
sub for dairy in cooking=coconut milk if you want something that's going to thicken up, try cashew milk (one part nuts to 4 parts water, a splash of molasses if you must, but i make it straight up nuts/water, blend in blender for 10 minutes or until smoooooooooth) i love the nut milks, but then again, we dont have any allergies to nuts. one part nuts/seeds to 4 parts water does it. if i'm in a hurry, i'll use a nut butter instead of the whole nuts. it really does take quite a while to blend down nuts into a milk. i'll run it thru my microstrainer (it's a reusable coffee filter gadget) if i want a really smooth texture. the nutflour that strains out can be used in baking once in a while, i'll buy the almond breeze (the chocolate heated up makes the best hot chocolate ever), but mainly i avoid the overpackaged stuff because they add so much sugar~who needs that!?

Out of the packaged stuff I'd say oatmilk and almond milk were my favorites. After being veg for a few years, not to mention all the articles against it, I don't drink soy anymore, I still use miso and nama shoyu for flavoring sometimes. I was starting to get really ridiculous headaches, and I really didn't eat that much soy to begin with. I plan on having tofurky once or twice a year though. Anyway we make our own nut and seed milks, the cheapest to make is sunflower seed milk, quinoa milk is pretty cheap too, and mixing nuts like brazil nuts, walnuts, etc. are pretty good, even a bit of pine nuts can make quite a difference if you can't afford to make a straight up pine nut milk. Coconut oil/butter can also be used really well in cooking if a buttery flavor what you're looking for, but also coconut milk is yummtastic.
