um, I just use katchup! however, my boyfriend puts his fries ON his burger! so, it's not a side, it's a condiment.
Depends what I'm in the mood for. Frank's Red Hot is a favorite of mine, but so is mustard or salt and vinegar (especially at the county fair!)

I like to spray my fries with it...and then the salt sticks to it. I prefer apple cider vinegar. Tastes just like salt and vinegar chips

malt vinegar, too. Rice wine vinegar is good. I made a veggie white gravy (gimme a break, I grew up in Texas) for fries a few times. Rich, but I can see the addiction potential.
chilli sauce...oh yum. i'm not a vegan i'm also partial to (free range) garlic aioli -but oly occasionally because it's a heart attack in a bowl. and, this is weird but i guess it's kind of like vinegar - i've always adored the taste of lemon juice on chips. It's so freaking good.
