what is the easiest way to insert a drawstring into skirts/pants? I'm not really into using zippers, plus i don't think a zipper would go good with what I'm making.

There is a gadget they sell for doing that. It's called a Drawstring Re-Stringer by Singer.
I tie a knot in the elastic or cord and run a large safety pin thru it & feed it thru that way.

oh crap, i didn't make myself clear enough. I meant like when you're actually making a skirt/pant, how do you make it so that you can put the drawstring in?

Ah yes, the tried and true method--large safety pin....people been putting in elastic, ribbon and drawstrings with them for decades... a whole lot cheaper than paying for a gadget and no big deal if you lose your pin!
