Okay well I think i'm the worst vegetarian in the world.. I'm so picky with my vegtables.. its terrible >.< so, most of the time I end up eating pastas and stuff like that which i know cant be good for me. I've looked at veggie recepies(i dunno how to spell that lmao) and almost all of them have veggies i dont like.... what do you suggest i do? I guess you cant help without a list of veggies i dont like.. lol... so here it goes.. cucumber, celery, raw unions, squash, mushrooms, and kind of pepper, beats, peas, spinach, olives, brustle sprouts, asparagus.. Yeah that's all i can think of right now and doesn't sound like alot. but is when you are trying to make a veggie dish! so what are some ideas of what i could eat besides pasta?!

Hmmmm ... You know, I didn't like a lot of veggies until I went vegan either. All you have to do is develop a taste for it. If you eat a regular American diet, veggies are going to taste like shit and only sugary foods that are bad for you will taste good. The more you eat of the things you don't like, and the less you rely on that sugary instant-yum taste, the better off you will be and the more you will enjoy vegetables. Of course, I still don't like okra ... YUCK!
start by looking up tsimmes: it's sweet and based on carrot and sweet potatoes. stir fried green beans, it's worth it to get fresh, too. jicama is watery and crisp, think of a less sweet apple. broccoli, cauliflower (which I only eat curried) carmelize the onions and garlic for a rich, buttery taste in a soup. Eat tomatoes? I can only have a small bit raw, so they need to be damn good, but dried or cooked I can handle (i get a rash from fresh...sigh...) I made myself try a new veggie a month for a couple years. I still have some that I don't like, and a handful that leave me flat (I eat them but they are ho-hum to me) Sometimes you eat because it is good for you. and eventually you stumble on a recipie that works. (accidentally burned greens, for instance. from bland to interesting.) cook some veggies with fruits until you get used to the tase.
thanks guys for the great replies. I think I may trying going on a no sugar and no fat diet again. I tried about a month ago but that only lasted like 2 weeks... I like most fruit.. the only one I can think of that i dont like right now is cantelope.(sp?) But other wise I'll eat basically any other fruit. x_Wax_x, those were the veggies that I don't like so basically anything besided them I'm pretty sure I like. It's just that when I look at recepies they all call for a few of those. And when I make my food I guess I just want it to have substance and not just be like say.. a tomatoe for dinner or something like that. The only think that I do know how to make that fills me up and tastes soooo good is veggie stew... But you can get a little tired of that eating it every night. I guess i can try to start liking the veggies i listed above.. Just not olives or celery.. those are just my least favorite and i can't stand the texture or the flavour. now that i look at it i think this post was kinda pointless but oh well.. you'll get over it! lol
i trained myself to eat mushrooms...lol i hated them with a passion, almost as much as i hate meat! i mean, its a fungus! but after eating a bunch of portobello sandwiches, theyre not so bad.
Some very good advice there. Do experiment, a new food/recipe each week or so. Not sure I ever had broad beans before going veg but now I love them (same with fresh peas, OMG so good). An omni diet does limit vegetables (because they're just 'side dishes') then that mentality often carries through when people go veg. Perhaps what's being done with the food could be a factor too. I've had a pathological hatred of carrots for years; don't mind them in things, and adore carrot soup, but cannot even consider them raw or plain boiled. So there's bound to be something that works for you. Of course it's OK to still have some dislikes. Have never understood why people eat celery.
I can't believe all of the mushroom-haters in this world! I have loved mushrooms ever since I can remember . Anyway, there a few vegetables that I don't really care for...two of them being celery (I agree with Sage-Phoenix on that one) and green beans. I don't know what it is about green beans, I just can't cut them. There were a lot of others that I didn't have a taste for, but when I started to go vegetarian and started eating them more, I realized that they tasted much better than the junk I used to eat. They also make me feel clean inside. I like vegetables more than I like cake now...go figure out that one. I guess what I am trying to say is, just try to develop a taste for them. Don't automatically have it in your mind that you hate them, and you might end up liking some of the ones you don't right now. If you find that you still don't like them, just look up recipes for the ones that you do like. That is what I did, but then again I like most vegetables. You can also try tofu because there are a lot of great recipes that call for tofu. Personally, tofu isn't my favorite, but a LOT of people like it a lot.
there must be somethin wrong with me huh? since i was little i;d always choose veggies over junk food and stuff. i mean, offer me an apple or a packet of chips, id always choose the apple. i've been a veggie 4 a few months now which is great cos i have more of an excuse to eat all the great stuff. and i'm so glad i did give up meat n everything, cos i started reading this book called 'dont eat this book' (from teh dude that did super size me). some of the facts in that book are disgusting. the most remembered one at teh moment, is that the cattle industries by millions of dead cats n dogs from the pound every year to feed to the cows that end up on burgers and there's rumors they're now doing the same with roadkill. not a good thought is it?
many veggies are acquired tastes. Our moms made us acquire them! I'm rather ambivalent with mushrooms. Buttons are a waste of space, portobellos are fine in small amounts and awesome in an airline meal. morels are great on occasion. I have a place where I harvest chantarelles and oyster mushrooms. but I love celery, raw, in summer.
When I went vegan earlier this year, I couldn't imagine eating all the veggies I knew that I needed. Like you, I was a horrible veggie for 8 years prior to this But I really wanted to be healthy, and even though I might not love the taste of all veggies, I try to eat them and keep in mind 'this is for my health.' Maybe what you can do is buy 2 veggies that you like and one that you don't like, and mix them together with some good dressing. Then it might mask the taste of the bad veggie, but you'll still get the good stuff from it. Hope you find something
been a vegetarian for yrs, and now, become a vegan, and u know what? i am addicted to vegetables. i just love them. here' s a list of my favorite, at the moment (it changes!) potato, aubergine (in strew, fried, in a mussaka.....), czrrot, ruccola sallad, mushrooms (fried w garlic) pumpkin, all kind of salsa or tomatosauces, chili pepers, and here is some exotic stuff (i get to learn to love during my asia travels) coconutshake!!!, wooked noodles w fresh sprouts , coconut curry (this might be my favorite one, choose between green or red curry, we're talking a thai dish), sauces based on peanut, sauces based on chili and basil (thaistyle) indian style: dal (red lentils soup with totmato and onion, spices or curry), actually much tastier than it sounds, cheap and filling... all kinds of bean sallads, wooked veggies, grilled, put in the oven. raw. Man just look around, once yu realize how much there is, wow, you'll get hooked!
Cucumber in ranch is awesome! I used to hate cucumbers and I started dipping them in ranch dressing and they are delicious. With squash, onions, and mushrooms, we fry them up in a little bit of olive oil, salt, and garlic pepper. Or, if you don't like the sound of that by themselves, try putting it on a pizza or something first. I learned that it's easier for me to get used to foods if I start incorporating it/them into foods I do like. Celery--have you tried them with peanut butter yet? I will never get tired of that snack! Spinach, again, incorporate it into a salad! Or, make your own lasagna. Lasagna is actually very easy to make. Go to the store, find the lasagna noodles and the recipe is on the box. The recipe I use calls for 2 cups of spinach. With all the cheese and tomato sauce, the spinach blends nicely and tastes delicous. Also, try burritos. I usually have beans, cheese, tomatoes, avocado, and a teeny bit of onion in mine. Beans have lots of protein in them and plus they just taste good! Good luck with going veggie, by the way! It was hard for me my first time, too. I only lasted 9 weeks in 2004. Over these past two years I've become a fan of potatoes, mushrooms, onions, and a bunch of other fruits and veggies I didn't really like before. I think it's good to do things gradually. That's how I did it this time (starting in April I just limited myself to so many servings a week, then reduced it after a couple weeks, and again and again until finally at the beginning of June I just said no more meat!).
