that sculpture is done with hands and shaping tools..the ice sculpture done in China at the icefestival in Beijing is carved rather than molded...and from what I remember when I looked at the numerous photos, some of their sculptures are as big as buildings. You should be able to find the pics googling ice sculpture in Beijing.
