    so delicious..

    get out the cheese grater and grate some potatoes.. fry them up in a cast-iron pan. alot will probably get stuck to the bottom no matter how much oil you use, so i always do up a little more to compensate. then add a mix of 3-4 eggs whisked with a bit of milk straight into the pan with the potatoes.. throw the whole pan into a preheated oven of around 350 degrees.. You can add in any spices or veggies you want with the eggs.. i usually do zuchini, red pepper, and onion with a little bit of garlic.

    keep an eye on the frittatta.. you'll tell when its almost finished cause the egg will have solidified and started to brown a little. (never usually more than 10 minutes). Add some cheese onto the top, and put it back in the oven to melt.

    its a nice change from regular old eggs and hashbrowns

    I was really into fritatta's a few years back. They're fun because you can add so many different things, and fairly easy too. BIG fan of hash browns here, but rarely have them. Besides, fritatta, is a fun word to say. :)
