I respectfully disagree, well partly... A little of what you fancy does you good. Sure it's good to branch out and have lots of new foods, but as a new veg I found it a bit overwhelming at times to give your diet such an overhaul, so found a comfort in eating familar foods (veg ones obviously) to remind myself that I wasn't 'missing out'. No need to beat yourself up about not being pious about it. Along similar lines a lot of meat dishes can be adapted. I used to crave turkey mozzarella ... when actually I was after the general concept*. So subed the turkey for quorn pieces and it's even better. my advice is at some point, I know they are pricey, but get a tofurkey...they are the most tastey wonderful things in the whole world, I could just like break down and cry while I'm eating them... Thats my advice... and you know, just try lots of new foods and be creative. Like if you crave some meal that has meat, just figure out someway to make it getting around the meat part. Like veggie shepards pie- god damn... Good luck!
Either buy a vegetarian cookbook or search the web for vegetarian recipes and make atleast one new dish each week. This will expose you to new dishes and the wide variety of flavor that you can get from a vegetarian diet. I disagree that someone new should replace meat with the mock meats. Mock meats don't taste like the real stuff and can turn someone new off to this new diet. After you have been away from meat for awhile it might be a good idea try them, but at first it can just make you miss meat.
