Soups for the cold winter

    I keep packets of vegetable bouillon handy. They tend to be rather high in salt however. I've made a few veggie soups with bouillon or tomato base... also had a killer mushroom and barley soup this week. Got any faves ?

    Tortellini soup, tomato soup, potato soup, lentil soup, black bean soup, all homemade of course...man, I just love soup, I'd be happy eating it everyday. I just throw everything in my crock pot in the morning and let it simmer all day long, and I make my bread dough so that we can have homemade bread or rolls with it. Then, come dinner time, dinner is all ready to go.

    i made a really good chili the other night... it was something like this.

    i sauted green peppers, onions and celery in a pot. added chili powder, oregano, and cilantro for my spices. then i added a quart of home canned tomatoes (my mom does that in the summer). after that simmered i added cashews, raisins, and pinto beans.

    thats not exactly it but it's really good.

    i think its fine to eat for all my vegan friends here too ;)

    I like veggie-noodle and tomato myself, and potato/leek soup!

    minestrone - I love ordering it at a local Italian restaurant, but I haven't found a recipe I like yet for making it at home - anyone have a recipe they LOVE & wouldn't mind sharing?!?

    Zuppa Di Lenticchie (lentil soup) 2cups dired lintils,3-4 tablespoons olive oil,2 garlic cloves,2 slices of onions,3-4 cups vegetable broth,2 carrots,sliced(optional),2 potatoes(optional)1 stick celery,sliced. Soak the lintils in a large bowl of water the night before-or at least 8 hours before-cooking this recipe. Place oil with garlic cloves and onion slices in a deep saucepan or large pot. Heat just until the onions start to become golden.Pre-cook the potatoes for 3-5 minutes in a pot of boiling water.In a saucepan,mix lentils with some broth,potatoes,carrots,and celery.Add more broth as needed.When the lentils are tender,the soup is done;approximately 20-30 minutes.Serve hot with home made crostini,or croutons.

    I've stocked my cabinets with creamy broccoli, potato leek, creamy mushroom and roasted red pepper & tomato soups. I'm ready for it to get cold and stay cold, that's when I eat a bunch of soup.

    aww.. it sux how you guys hit winter and bring out the soup recipes when I'm hitting summer and going for salads. I LOVE soup.

    There are a lot of cold soups that are good for the hot weather.

    Soup, its not just for winter.

    Roasted red pepper soup is great hot OR cold.. if I find a good recipe I'll put it up here.

    we've been going through so much soup at the coop where i work... its hard to keep up with all people coming in for soup... aw well, we're happy to make it for them :)
