So i was wondering how long you should marinate tofu? I usually marinate it for about 45 minutes. Should I marinate it longer? Any tips on cooking good tasting tofu? I just made stir-fry tofu in lemon garlic sauce. It's yummy!

I like to bake mine, then marinate it.

some people say to freeze it, thaw it out and then cook it. They say it changes the texture. I'm going to try it some day.

I freeze it, it holds its shape better afterwards. I don't think it matters how long you marinate it, but it soaks up stuff pretty quick.

i marinate then bake. freezing is best for things where the tofu needs to be crumbled (tacos, chili, etc.)

Tofu can be bought in health food stores as well as in many Asian markets and now can be found in some supermarkets in Europe. Many ways to prepare tofu. Most tofu does need to refrigerated.

I've gotta try the freezing trick!

When I'm going to marinate it I toss it in the marinade last thing before bed, and pull it out first thing in the morning... I do most of my cooking in the morning, so that works well for me. (but DON'T do this if you've got a salty marinade... it picks up too much salt!)
    love,
    mom
