Saucy Chicken

    three great things about this recipe:
    ... 1) it's easy
    ... 2) you can make it each time changing one of the variations, it comes out very different and equally delicious
    ... 3) inexpensive to make!

    Saucy Chicken
    - 3 or 4 chicken breasts, boneless and skinless, uncooked
    - 1 cup either lemon juice, dry white wine, or beer
    - 1 can either condensed cream of mushroom or condensed cheddar cheese soup
    - 4 large cloves crushed garlic
    - 1 can of sliced mushrooms, strained
    - 1 tsp either chili powder, or 1 tblsp paprika or herbs de provence
    - 1 tblsp sesame seed oil (I prefer sesame seed oil because if its nuttiness, but olive or vegetable oil can be used)

    Cover bottom of small pan with oil, lay chicken breasts on top. Mix together, in a bowl, the other ingredients. Preheat oven to 400F. Pour sauce on top of chicken, cook for 30-40 minutes, until chicken is cooked.

    Optional: on top of dish, once cooked, sprinkle your favourite kind of cheese, shredded, and broil for another 5 minutes.

    SUCCESS!!! This was great! Bubbly, saucy and very tasty! I don't eat canned veggies and my fresh mushrooms were not really fresh anymore, so I added a handful of chopped green onions, used cream of mushroom soup and both paprika and chili seasonings.
