Actually I’m not kidding. Last night I put meat, tomato paste, water, chili powder, pepper, red beans, black beans, and jalapenos in the slow cooker and it came out watery and reeeeeely spicy.

I figure it was just too much water and chili powder.

well I think its the slow cooker. I always use the stove and caned beans it takes like 2 hours but it all is pre cooked before it comes together.

I don't think it was the chili powder that made it so spicy, but maybe you put too many jalapenos (specifically the seeds) in it?

How much water did you add? I've never used water to make chili, the recipe I've always used calls for either tomato or veggie juice.

Next time, if you make chili in your slow cooker, when it's done cooking, take the lid off the pot and let it sit for a little while on the warm setting, half an hour maybe, it will thicken the mixture up. When the lid is on, it causes condensation, a water build-up, which can result in a more watery finish to your meal.

actually, potato could be an answer: I know a cook who makes meat chili (Chile is a country and a particular capsium family pepper) and when he overdoes it for his diners, he'll ad pureed potato.
fairly unsusual -- i think I know of one other person who did that, and I grew up around some serious chili cooks.
try less liquid, since slow cookers don't allow liquid to escape like stove top cooking does.

Try some corn starch or masa harmana(sp) to thicken up chili.. mix a couple of TBS of it in a 1/4 C. of water and mix in with the chili.

    shameless, that's masa harina.

    I love chili!

Here's a secret ingredient: unsweetened chocolate powder (just a little).

Here's another: chipotle peppers (in any form).

    enjoy.

BTW, we have a recipe forum. You can search for chili there and get a lot of recipes... :)

I like making Chilli, it's so easy to make, very cheap and you can eat it for days. :)

My favourites are either using mince or green lentils (depending on whom I'm cooking for).

And you have to add in that little bit of cocoa to make it special :D

I brown onions with mushrooms in the pan with cumin and pepper, add ground beef and brown that, I add red kidney beans and stewed tomatos, potatoes, carrots. Then i'll add a bit of water, a ton of tomato paste, bbq sauce, soy sauce and chilli powder, tthen I'll let it cook for like 3 hours. Lovely.. more like a chilli/stew hybrid mix.
