I never really liked Philly Cheese Steaks, that is till I went to Philly for a Bob Dylan concert and tried the real thing. And I don't know what you're all talking about because they were advertised all over as "Philly Cheese Steak". And provalone was the only kind of cheese they were using. At some of the resteraunts you could tell them to use a different kind, but at the stands on the street they only had provalone. Dame that shit was CHROOOOONIC!

I had one real Philly cheese steak my whole life, when I was about 7. I ate it right after walking up and down the "Rocky steps" with my dad. I recreated one a few years ago. I think it was actually the first thing I cooked for my boyfriend. I got a really good cut of steak and put it in the freezer until it had hardened a little bit, making it easier to cut it into super-thin slices. I fried up some onions and peppers with it, melted a heap of sharp cheddar over it, and served it on a crusty sub roll with mayonnaise and mustard. Not a total recreation...but man was it good! It's tasty memories like that that sometimes make me reconsider my mammal-free diet.

gotta love the cheese steak. lived nearby or in philly all my life. although i never heard of cream cheese in the steak, whatever you like. usually you get whiz especially if you got pats or genos, the main place people go from out of town. i dont care as long as its extra cheesy.. gotta love it. =)

Well that very well may be, because I was on a "mission" during that trip....my senses were stripped and my hands couldn't feel to grip. But I do distinctly remember them being advertised as "Philly Cheese Steaks"

    Yeah no doubt....

Easiest recipe for a Philly Cheesesteak(varies by area):

    Ingredients:

-Sliced Roast Beef from your local deli --half or full pound depending on quantity of sandwiches

    -Green Bell Peppers

-Yellow or White onions(Spanish onions rock, but they're not for this...)

    -Cheese. Provolone or Mozzarella

-Sauce. Worcester + a thimble of Tobasco(varies by area)

-Good bread. Local bakeries sub rolls are key. Slight crisp to it, nothing soft.

    Tools:

    -All of the above[IMG]

    -A griddle

    Method:

-Heat griddle to mid or high heat, throw roast beef on left side of griddle, peppers & onions on the right.

-Wait 1 minute and chop up the beef, flip it around with the spatula a bit, and also dice up the peppers & onions into 3/4" chunks also with the spatula.

-After another 2 minutes of griddling and flipping the ingredients, shape them into 3" X bread length piles on the griddle so they'll fit the bread.

-(Optional) Drop the bread on the grill for a LIGHT toasting.

-Heat worcester & tobasco in a metal tin on the griddle for a minute or so

-Sprinkle shredded, or lay slice of cheese on top of the beef

-Wait a minute or 2 until the cheese has melted, and chop again with the spatula

-Let the beef & cheese synchronize, then toss 'em onto the bread with the spatula.

    -Cover with peppers & onions

-Fluidate with the sauce that was heated earlier

-Smoke bong, and eat that fucker
