I would pick Don Delillo, Cormac Mccarthy, VS Naipal, Marilynne Robinson (wish she'd publish more) and Toni Morrison. Phillip Roth and Salmon Rushdie are close.
Vonnegut, Eddings, Herriot, Peters, and Rowlings. Probably none of them considered classic in any measure, but fun reads all the same.
It's rather silly to categorize writers into "Last 25 years" or so... time might influence writing, but it surely shouldn't categorize it.
