I bought a lemonbalm plant because I looove lemonbalm tea. And now after 3 short weeks on my deck it's becoming a monster! It's big enough right now that I'm going to have to transplant it into a much larger pot this weekend. (it was in a 1 gallon pot to start with!) So now I'm wondering - other than crushing the leaves for tea, does anyone have any fun recipes for my delicious-smelling herb?!?
    love,
    mom

Oh yes, lemonbalm goes crazy!!! I use it in a lot of cooking as it gives a nice lemon flavor. I like mixing it with other fresh herbs and tossing my potatoes in it with some olive oil, or on chicken if you eat meat. You can also use it as a nice garnish on desserts. You can put it in pretty much anything that can do with a lemon flavor.

It's also nice to make oil from, and in other cosmetics.

You can chop lemon balm up really fine and put it in goats cheese and put that on a sweet cracker. The acid of the cheese balances out the sweetness of the cracker really nice and the lemon balm adds another layer of flavor to the cheese.

once you transplant it, it wonnt grow so much more. And I really dont know what else there is to do with it, but youll have alot to experiment with. I actually think it would be good in a burritto, or if you drink, it would be good in a cocktail.

one of my favourite homemade salad dressings:

1 cup of pressed lemons and limes, including pulp + 1 cup olive oil + 1 cup chopped fresh herbs (lemonbalm is great!) + 3 tblsp apple cider vinegar + 2 or 3 cloves crushed garlic. Shake well in a bottle to mix and use the amount you want on your salads.
