I made Taboulih last week to go with a Falafal meal and now I have a box of bulgur in my kitchen that needs a job.....wanted to know if anyone had any good recipes....thanks!
You can make a great veggie burger. Mix bulgur with 1/2 cup mushrooms(chopped), 1/4 cup onions(chopped), 2 Tbl. parsley(diced), 1/4 cup to 1/2 cup spelt/unbleached white flour, 1Tbl. nutritional yeast, & 2 Tbl. hemp seeds. 1 tsp. Granulated Garlic, 1tsp. onion powder & a pinch of cayenne pepper or to taste. Saute mushrooms & onions until transparent. Add parsley,flour, nutritional yeast, hemp seeds, garlic & onion powder to cooked bulgur. Mix well with your hands until mixture becomes firm enough to form patties. For best results, prepare ahead of time and allow patties to cool in the refridgerator to become more firm. This will allow the patties to hold together while cooking. Heat skillet to medium temperature and add 2-3 Tbl. of oil. Add patties to skillet and cook until golden brown on both sides. Serve on your favorite buns. Monique Sharp
