editing and combining 2 dvds

I would like to combine both of the Sublime dvds that I have. One of them is "Stories, Lies, Tales, and Exaggerations," a documentary with preformances interspersed throughout. The other is "Everything Under the Sun," a no frills showing of live preformances. I would like to combine the two onto one dvd, featuring only the preformances of both. I'm sure this involves manipulating the chapters, but as I have NO experience with this kind of thing I need help. I've already ripped them onto my computer. Now what? Keep in mind I'm running Mac at the moment. Is this possible with iDVD? If not, what should I use? And lasty, what do I do? Thanks.
