I'm intrigued by that purple thing (egg plant)

    It seems like a great meat subsitute (and healthier than the fake meats) so I picked it up. My mom did it a few times when I was young and it reminded me of meat. And recently I had an egg plant sandwich with peppers, feta cheese, provolene cheese, onions and mayo and it was amazing.

    I am doing two egg plants (and green beans) for dinner. The egg plants are in the oven and have 40 minutes to go.

    My idea, to put it in a bagguette and add some goat cheese and fried onions.

    So quick, any other ideas before I committ myself to that?

    Maybe I will just dip it in tamatoe sauce.

    not a mock meat technically..not at all. but a good substitute with some similarities

    I LOVE egg plant! I've been told that I make some banging egg plant parm!

    its a little late now, but just remember to peal the skin because it gets really leathery.

    Really? I've never peeled one and haven't had any problems. You generally don't even have to salt them either.

    Anyway I like to make moussaka (with soya mince instead of meat), and tend to get recipes from here http://uktv.co.uk/food/homepage/sid/566 (just do a search for 'aubergine').

    yummy way to eat it is to cut it into slices salt it let it sit then wash the salt off and fry it in some oil in a pan then take them out let them sit on some napkins. then cut it up with some garlic, cilantro, and lemon juice eat with hummus and pita bread
