I've been munching peaches all day... But at the moment I'm munching salad - romaine lettuce, onion, black olives and croƻtons, and homegrown tomato, cucumber, and radish, with goddess dressing. Oh, and sunflower seeds. Yum.
steamed veggies (brussel sprouts, rainbow carrots, and kale) and one of the new rices I just bought--either bamboo (green) or black (from Japan).
tofurky with rice stuffing. quartered parsley potatoes, steamed veggies in a hawaiian marinade, and corn on the cob.
i had a tofuky sandwhich for lunch...havent had dinner...im thinking maybe a brocli cheese hot pocket.
i had raisan bran for breakfast...pinnnaple ice cream for lunch(sort of haha) and a squash, cheese, cucumber sandwich with ranch and foccaia bread. so good
Same thing as every night - dahl/lentils, one type of veggies, and indian bread. joy. Breakfast is normally toast (which i just realised vegans dont eat) but today it was pasta Lunch - jacket potato and butter as i ate pasta for breakfast and that was supposed to be lunch...
I eat toast all the time! Toast and tomatoes and sometimes cucumber has become a fave of mine lately, since we've had fresh delicious tomatoes in the garden... and a friend who's cucumbers came out better than mine has been kind enought to supply me with some of his! I just use a vegan whole grain bread, and top it with a little bit of Earth Balance margarine.
Pasta with homemade vegetable sauce The sauce is courtesy of our neighbour, who is a retired chef and often makes way too much food for just him & his wife. So we get some too. Last night I made spinach & chickpea curry, from 'vegan with a vengeance'. That and the sweetcorn chowder are my current favourite recipes from the book. I have leftovers of both in the freezer ready for a sucky day.
Homemade lentil soup. Served with a grating of Pecorino romano cheese and garlic croutons. A blackberry cobbler for desert, if I can get away from the computer long enough to go picking. Blackberries grow in great profusion around here. x
Today, homemade chili. Vegetarian of course. With lots of oompa. Hot, but not radioactive. Full of kidney beans and corn and tomato chunks and onions. Seared TVP for a ground beef substitute. Thick and rich and hearty. You should break a sweat on the forehead in about five minutes. Blackberry cobbler for desert. x
Leftovers. Of course, chili is just better on the second day anyhow. By Tuesday, I'll be farting like a Klingon. x
