Hmmm.. taco or tamale pie is always yummy and easy to make. Taco pie is layered with tortillas while tamale pie is layered (or just a bottom layer) of polenta. First layer is beans- either refried, pinto/kidney/black, or a mix. Then there's veggies roasted veggies (I've done it with zukes, squash, bell peppers, and onions mixed with black pepper and cumin, but you could experiment). Then there's salsa. From there you could either add another starch layer and repeat, or that could be the end. Bake it for about an hour and then top with garnish of your choice- I like lettuce, pico de gallo, guacamole, and cilantro. If there are lactos that you want to accommodate, you could get some shredded Mexican cheese, or you could use soy cheese if you so desired (never tried it though so not sure how it would work). You could even use soy cheese as a layer. It's not super time consuming, just chopping veggies can take awhile. However, totally yummy and nutritious. Also, it can easily be adjusted so it's gluten free We made that for a vegetarian (so we used dairy cheese) potluck and one big pan easily fed 15 people. We kind of experimented so no official measurements- sorry! It was a HUGE hit though.
