MMM Vegan stuffing!!!!

    Thankgiving for us Canadians is this weekend.

    No tofurkey over here. Personally I think it is grrroooody!

    Nut stuffing

    Breadcrumbs(enough to fill up the pans you are going to cook in)
    ( I use loaf pans but it is better to use shallower cake pans)
    I also use homemade bread crumbs( slice up bread and leave out to dry) because I think they are waaaay better!
    but store bought work fine too.

    In a frying pan you will need to fry up one large onion chopped very small in some oil.
    Once the onion is yummy and caramelized throw in lots of seasalt,pepper
    small veggies chopped ( i use a mix of broc cauli and carrots chopped small)and i always add peas...mm.. just dump some frozen peas right in:)

    You should only be adding about 3/4-1 cup of veggies to mix

    DONT FORGET TO ADD SOME FRESH HERBS LIKE SAGE at least!

    Now to the frying pan dump in either a good 3 cups of water or vegetarian soup broth.
    Throw in whatever nuts you like..A good cup or more full of mixed nuts like cashews, almonds, walnuts..etc..whatever kind you like.
    and about 3/4 cup of nutritional yeast flakes!yumm(nut yeast part can be skipped)

    Now you wil need a giant pot or bowl but add in all of your crumbs and stir well!

    If you dont have big enough pot or bowl just add the liquid mixture to your crumbs right in the pan. Make sure to get lots of the nuts and veggies mixed into the crumbs as well!

    make sure they are not soaking wet just moistened all through.

    now taste test and see if you need more seasalt or pepper.


    mmm
    throw into oven and bake for around 30 minutes .
    I usually leave on 350 for 25 minutes then crank to 400 for a good few minutes until i see the top darkening up!mmmm crunchy bits!

    let your stuffing sit undisturbed for at least a few hours so it will settle and not fall apart too much when you dig in!

    and of course serve the yummyness with cranberry sauce!

    I looooove stuffing... my parents made veggie stuffing just so I could eat the stuffing last thanksgiving. Thanks for the recipe!

    lol..just post to the recipe board, too. A cut and paste is fine in this case.

    I made vegan stuffing one year at my mother's and my pan went before the carcass-drippings pan.

    and my super-secret cranberry sauce vanished.

    So, to make this a discussion thread, how do you handle getting the omnis to give your food a try?

    Do you feel "sneaking" our specialty ingredients is ethical (given how we feel about sneaking meat/byproducts/etc into food )?

    oooh i forgot the fresh herbs in my recipe!!!!!
    You absolutely need to go buy a fresh little bunch of Sage and or rosemary and thyme ..
    At least Sage to the mix before you bake it!(If your adding rosemary and thyme make sure to add it to frying pan with veggies so it can soften)

    duuuh I cant believe i forgot the best part!


    Now about sneaking stuff into peoples food.
    If Omnis or whatever..( People who dont appreciate good food)
    dont want to try the best food on the planet and really want to deny themselves pleasure AND better HEALTH!!!...then I just let them.
    Most of the time people I am around try my food and tell me they love it but wouldnt know how to make it.
    It really is about laziness and pattern...routine....
    hard to change for them after so many years or even sometimes a lifetime of eating meat.
    I just let them be .
    They usually just want to come over all the time to eat my food anyways;)

    but one time about uhm...4 years ago or so I made a yummy vegan lasagna and just told people it was lasagna and even the meat eaters wanted seconds! I will have to post that recipe too . More labour intensive but worth it!mmmmm I'm getting hungry

    Just yesterday a 32 year old man (a friend of my mothers from work)came beside me and started chewing on his big ol' piece of cow ribs right beside my face because
    I was talking about green house gases caused by the meat market
    ...............
    People are ridiculous ...lol

    Ooooh, stuffing :) I've gotta make up some bread so we can have some - now I've got a terrible craving for sage & savory!

    Because of our diets people pretty much know when they come over that what they're eating may not be exactly what it looks like. I just tell people what it is, (that's lasagna!) and leave it at that unless they ask.

    I would feel pretty bad about lying, but I don't feel compelled to give a complete ingredient list either ;)

    I'm thinking of all the "fool meat eaters" comments we see in here.
    Is it fair to not tell omnis if particularly not SAD items are in a dish and then get upset when they sneak meat into stuff?

    and teh hot or cold answer is hot at the meal and cold as leftovers....
    stuffing sandwiches, anyone?

    I don't think sneaking vegan food into someone's diet is anything like them sneaking meat into ours. That is unless someone has a strong ethical problem with tofu.

    Dang, that sounds awesome!

    And to be honest.. if people aren't eating vegetarian food anyways, ie: vegetables.. then we should be "tricking" it into their meal anyway.. because most likely they wont live long living mainly on meat and probably the occasional potato ^^

    so, because we perceive our standard as better in some fashion (ethics, health) it is ok to fool people?

    Bagism, you are assuming all veggies are ethical veggies, and that just isn't so.
    I even know of "health vegans."

    I guess "sneaking " stuff into food just feels creepy to me either direction.

    I guess that was my point too... I have a problem with "sneaking" food both ways also. Why can't we just be honest about what we serve to our family/friends? I want to know what I'm eating at THEIR house! Don't ask/don't tell is one thing - but purposefully trying to trick someone into eating something they'd rather not just doesn't seem right to me.
