if you have bananas that are going over ripe then throw them in the freezer, skins and all, and use them for this recipie. peel two or three frozen bananas ( you may need to peel them with a knife or run them under the hot water tap to loosen the skins) break bananas into pieces and put them in a food processer add a sweetner like agarve nectar (or honey if you are veggie not strictly vegan) add a few drops of vanilla essence blend, check sweetness and add more sweetner to taste this makes a smooth lovely ice cream substitute , best eaten straight away.
